Oma’s Boterkoek (Dutch Butter Cake)

This is a favorite of the Kubik family, and I mean the ENTIRE family! This recipe comes from my Grandmother on my Mom’s side. A tough lady (both in fact) with an amazing past. Make this sweet treat, then invite Nick, Jen, and Peyton over to hear the entire story! First, here’s the recipe…. SPECIAL NOTE: You can get a special Boterkoek pan to make this dessert “the old fashioned way”, but they are hard to find. We do have one here, hint hint, nudge nudge!
1 Cup Sugar
2 Cups Flour
2 Sticks Butter or Margarine at room temperature (can also use vegan butter, but may need to add more salt)
Pinch of salt
1 tsp Vanilla
1-2 tbsp milk (can use nut milks)
Pre-heat oven to 350 degrees.
Combine ingredients except the milk. Knead together with your hand until if forms a smooth ball. Press into a shallow pie pan (or Boterkoek pan). Use the back of a fork to make a lattice design on the top of the dough. Pour your milk on the top of the dough, evenly spreading it over the top as best you can.
Place pie pan in 350 degree over for about 30 minutes, or until the top is golden brown.
Remove from oven and let cool. Pour your favorite drink for dessert, cut the boterkoek and enjoy! We usually cut them in a diamond shape about an inch wide by an inch and a half long.
